The violet has become the queen of crystallised natural flowers, with a fragrance that spreads generously across the palate and evokes a thousand stories and memories.
The production of crystallised flowers, seeds and leaves dates back to the 18th century. At that time, they were simply cooked in sugar and sold by apothecaries. 200 years ago, a few confectioners turned them into sweets by crystallising them as soon as they were picked in a candy sugar syrup. Since 1818, the little hands that no machine has been able to replace to this day, have lived to the demanding rhythm of these flowers, transforming armfuls of violets, roses, mint, mimosa or verbena into delicious sweets.
And as for the little secret, it's one of Violette & Berlingot's signature sweets, so don't hesitate! We love decorating a floating island or a simple fromage blanc dish with red fruit coulis.
