The traditional know-how from Alsace. Unlike the "Nests", Tradition Nudle are made following a process representing the craftsmen know-how : the pasta dough is rolled out thanks to rolling mill, without heating, which gives the Nudle their creamy colour. Their texture and their behaviour in the mouth are harder, more rustic, and similar to the fresh homemade Tagliatelle from the past, and always with high quality standard raw materials : durum wheat semolina and fresh free-range eggs. Enjoy them with olive oil or a little butter !
