Vinification without added sulphites:
Soft pressing, fermentation and maturation on fine lees at low temperature.
Distillation : At 57% vol in our traditional single heating steal.
Triple casks maturation (French oak) :
12 months in new pedunculated oak cask to define its identity.
18 months in an older cask to refine its personality.
6 months in sessile oak cask to develop its smoothness and vanilla aromas.
Tasting Notes :
Colour : Amber
Nose : Hints of vanilla, slightly toasted.
Palate : supple and smooth with notes of vanilla subtly spicy. A nice mild and fresh balance with a long and scrumptious finish.
Tasting advice : Dry, on the rocks, with cocktails.
