Grand Tomachon is a cheese made in the Bourbonnais region.
It is a Tomme with a grey bloomy rind made from thermised cow's milk, with a semi-hard, uncooked pressed paste, averaging 5.8 kg in weight. It has the shape of a straight, flat, and regular cylinder measuring 32 centimeters in diameter and 7 centimeters in height.
During 35 to 40 days of maturing, the cheese develops a frank and typical lactic taste, with a soft texture and an opening that gives it a traditional and mottled grey rind.
