Vinification The must is chilled almost to the point of freezing to halt the fermentation process leaving much of the natural sugars remaining in the wine. Then the juice is carbonated. Tasting notes Appearance: bright, golden yellow. Nose: floral , exotic fruits Palate: round, with a great acidity and long and fresh finish. The wine is very aromatic and has stone fruit aromas (apricot, peach). The wine is semi-sweet and low in alcohol (5.5% alc). Very fine bubbles are revealed during the tasting, bringing a pleasant freshness and lightness.
