Champagne Gounel-Lassalle draws the original taste of champagne from its history. To take your taste buds on a trip to the heart of our vineyards. The convictions of Arnaud, who represents the 4th generation, lead him to undertake a voluntary and progressive approach with a work of the soil always more respectful of nature in order to preserve and protect our landscape and the Men. The vineyard, labelled High Environmental Value (HVE) level 3A, sustainable viticulture in Champagne (VDC) extends over 5 hectares, spread over 29 plots located in the villages of Chigny les roses, Ludes and Rilly la montagne, classified as Premier Cru. To go even further, the estate has started an AB conversion in 2021. We grow the three Champagne grape varieties, pinot noir, meunier and chardonnay. Our vineyard, which is very fragmented, gives us different orientations, soils and typicities, bringing complexity to our champagnes. This is a great opportunity for a plot-by-pot vinification in barrels, on cork. The bottled wine is only stored on lees to keep ideal ageing conditions. The bottles are kept in the cellar and respect the ideal and constant temperature. This ageing time is between 3 (for non vintage bottles) and about 8 years (for vintage bottles). To let the champagnes and the work of the vineyard express themselves freely, Arnaud has chosen not to dose his wines.
