Located in Boulogne-sur-Mer, France’s leading fishing port. J-C David has been mastering the art of fish smoking since 1973. True to the Boulogne tradition, we uphold time-honored methods to produce herring, haddock, and salmon of exceptional quality. Our expertise is rooted in authentic craftsmanship, combining fish, salt, and smoke in traditional wood-fired ovens known as coresses. This ancestral process naturally preserves the tenderness and delicate texture of the fish, ensuring a unique and distinctive flavor.
