Who are we
Named after the 200-meter wide, 5000 - 10,000 year-old meteor crater which sits at its heart, the 30 hectare domaine is in the the village of Cabrerolles 300m high in the foothills of the Haut-Languedoc mountains. Our schist terrior is rarely found elsewhere and having appellations in Faugères (blue schist) and Saint Chinian (yellow schist), we are able to explore and compare their influence. Nutritionally poor, the schist terrior forces the vine roots to grow deep, keeping yields low (25-30Hl/Ha), and brings a distinctive ,minerality to the wines. The mixture of our altitude and the protection of the Cevennes mountains to the north, gives the wines freshness and acidity. The Mediterranean Sea to the south ensures optimal ripening of the grapes.Aromas of wild herbs (mint, thyme and fennel) are often found in our wines, characteristic of the surrounding garigue.We constantly look for ways to improve our production methods whilst respecting the environment and revealing the potential of our terrior.
