VINIFICATION AND MATURING
Hand-harvested with plot selection. Carbonic maceration (whole bunches), for delicate extraction of aromas. Aged in French oak barrels for 18 months, with a mix of new barrels and barrels from another wine.
TASTING
Intense ruby color with purple high-lights. Aromas of red and black fruits (raspberry, blackberry) and spicy notes of pepper and licorice. Silky attack on the palate, with well-integrated tannins. Flavors of ripe fruit and dark chocolate combine with mineral freshness. The finish is long and elegant.
SOIL
The slopes of schist and clay-limestone provide ideal soil for Syrah, Grenache and Carignan, revealing all the typicity of the AOP Saint-Chinian terroir.
FOOD & WINE PAIRING
Perfect with roast duck, herb-flavored lamb or mature chees-es like Roquefort and Comté. It also goes well with dishes such as boletus risotto or grilled veg-etables.
