Terroir and Vinification
This clay limestone soil of “La Comme” is located east of the village of Santenay in the 1er Cru area. Sustainable agriculture with plowing of the vineyard and thinning out of the leaves.
Manual harvest. Usage of a sorting table, destemming and fermentation in stainless steel thermoregulated vats.
Ageing in oak barrels (half brand new, half used) for 10 months.
Tasting Notes
Appearance: bright ruby color
Nose: complex nose with cherry, almond paste and undergrowth aromas.
Palate: very ample with cherry and coffee beans notes. Tannins are present but pleasant. Long finish.
Wine and Food Pairing
Ideal with rabbit terrine - beef in wine sauce - foie gras with apples - Brie cheese
Service temperature : 15 to 17°C (59 to 63°F)
