Terroir and Vinification
At the foothill of Mont de Sène, the appellation Santenay lies on hard brown limestone soils. The etymological origin of the town goes back to Roman antiquity, famous for its thermal waters and its source "Santinae aquae" ("beneficial waters"). "Rousseau" is a very common family name in Burgundy and still well represented today. Traditional fermentation in big oak barrels, then ageing for 10 months in French oak barrels (medium toasted)
Tasting Notes
Appearance: bright ruby color
Nose: aromas of strawberries and black cherries. A hint of flintstone is also noticeable.
Palate: Nervous, fleshy and full body, this wine has a real character and a beautiful frame. The finish, on the other hand, is long and fruity.

Ideal with beef fillet, wild game, classic cheeses
Service temperature : 15 to 17°C (59 to 63°F)
