This wild boar rillette with gin and juniper berries is made from 75% wild boar meat from France.
Although it is the fattiest game meat, it is still 5 times less fatty than traditional pork, with a comparable taste.
The Cuvée ADN gin that enhances this recipe is 100% Lyonnais, organic and responsible. It has been designed around a precise and meticulous selection of 19 different botanical aromas. These herbaceous, complex and intense aromas give this rillette plenty of character. The juniper berry, meanwhile, envelops the whole product, adding woody and slightly acid touches. Finally, to add smoothness and character to our rillette, we add French duck fat.
Wild boar live in our French forests, with no human influence on their diet. Being omnivorous, wild boar feed mainly on plants (tubers, acorns, cereals, etc.) but also on mushrooms and small animals.
