Pastry nose: Fresh warm brioche. Yellow fruit such as peaches. Mouth in agreement with the nose on a more marked pastry tone, with marzipan, toasted almond. Pairing: Poultry in a salt crust, soft carrots and new turnips. Cheeses: Comté 24 months from Jura, Gruyère & Etivaz or Fribourg Switzerland.
