Petit Cernin Bubbles
he harvest is done manually at optimal maturity. The first alcoholic fermentation is carried out in stainless steel vats at a low and controlled temperature (16°C). The second fermentation then begins in the bottle: this is the “prise de mousse”.
Aging on lees for between 15 months.
