A land of contrasts at the crossroads of cultures, Occitanie also features an exceptional gastronomic heritage. It is based on traditional local know-how and high-quality products:
foie gras, truffles, Roquefort cheese on the land side and Mediterranean oysters, Lucques olives from Languedoc, rice from the Camargue and anchovies from Collioure on the sea side.
Alongside the specialities of the Mediterranean coastline, such as “brandade de morue” in Nîmes, “tielle” from Sète or “crème catalane”, there are also unique specialities in the South-west such as “cassoulet” from Toulouse or “aligot” from Aubrac.
Regional gastronomy is also given due recognition by numerous Michelin-starred chefs in France and around the world, such as Gilles Goujon in Fontjoncouse, Michel Sarran in Toulouse, the Bras family in Aubrac and Japan and Paul Pairet in Shanghai
