PANTHALASSA
The Panthalassa was the vast global ocean that surrounded Pangea, a supercontinent that existed at the end of the Paleozoic.
This wine comes from the Chenin grape variety.
We tried to shift the vegetative cycle of the vine by shifting the pruning, in order to avoid sunburn and excess heat on the grapes as much as possible after veraison, from mid-August.
The harvest (October 2020) that produced this wine had noble rot (Botritys Cinerea). These grapes were no longer golden but ranged from dusty pink to chocolate.
This is an exceptional maturity for grapes intended to produce great dry wine.
After the slow pressing of these grapes, the must (grape juice) fermented in concrete eggs of 16 hl, weighing, empty, about 3 tons each.
The aging on total lees of this wine took place in these same concrete eggs.
Bottling was done in November 2021.
Delicious now, this wine will improve from year to year. Fifty years of aging in a good cellar will make this wine a real nectar.
