The Signature is an exceptional oyster that reveals the excellence of our know-how transmitted and enriched since 1950. Passed down for 5 generations, our know-how makes The Signature unique and exceptional both on the taste aspect with a firm and tasty flesh, and on the physical aspect with a perfect and incomparable shell. We work and select our oysters from an early age to guarantee an exceptional oyster with the perfect balance. Our most beautiful oysters are taken one by one according to a strict and meticulous selection. At each stage of breeding, we carry out the water removal in a more or less long way. This also-called "exondation" practice reproduces the natural effect of tides according to the meteorological factors of which we have learned all the specificities. Thanks to exondation, our oysters offer a firm and generous flesh. Their shell is more resistant and much prettier. They can travel without the risk of being damaged and delight the stalls with their beautiful presentation.
