The little oyster in the GEAY family.
I am the pioneer of the family. I've had the pleasure of knowing all the descendants of the GEAY line. At the water's edge and to the rhythm of the tides, I grow and mature for at least 30 months to reach my adult size. I am then placed at the bottom of a claire to mature for between 15 and 28 days, filtering out all the richness of this terroir.
With its light, lively flavours, I delight the taste buds of my guests with my fresh, iodised taste and the finesse of my flesh. My nutty flavour makes me an essential part of any convivial meal.
