Grape variety : 100% Pinot noir
Wine making process : Full desteeming and hand sorting out. Traditional tank maceration for 25 days at 12°C.
Fermentation for 4 days to get full extraction of Pinot noir.
Some footing on every vat. Natural alcoholic fermentation.
Wine taken into barrel by gravity filling. New oak 30% - one racking only
Aging for 18 months
Tasting : Beautiful heavy red colour, for plesant red and black tiny fruit flavors,
With some peppermint and under forest notes. Soft tanins for a well balanced wine. Classic Burgundy.
Wine pairing : Best served over duck and any grilled red meats
Serve between 14 to 16°C
