- Varietal: 30% Melon de Bourgogne, 40% Chardonnay, 30% Grolleau Gris.
- Soil: Schisteous and pebbles .
- Viticulture: The entire vineyard is cultivated using Sustainable Agriculture practices… and now, certified Terra Vitis and HVE3.
- Vinification: 36 months ageing & stirring on lees for the Melon de Bourgogne – 15 to 18 months storage "sur lattes" for maturing before disgorgement.
- Tasting notes: Persistent, tonic, fine and great looking bubbles on an intense, elegant and aromatic nose of juicy ripe white fruits, flowers and pastry notes. Fresh, rich but zesty palate on green apples, exotic fruits with coffee hints… everything perfectly balanced and long.
