Lou Saussoun (fennel almonds spread) - Tartinable - Spread – Delight - Delicacy

Typical local recipe (Haut-Var) based on fennel, almond powder, mint, anchovies, lemon... The story: this recipe was eaten in the vineyards or in the fields during the morning break in the form of a large thick soup in which bread was "sauced" (hence Le Saussoun). We have made it a very aromatic and original spread that will surprise your guests. In the kitchen, serve with the fish (add a large spoonful of Saussoun to the cooking broth and baste over the fish). Use: On toast or as an accompaniment to tomatoes or raw vegetables. Put in the fridge after opening.
