Lion & Dragon - Still White Wine

The Rolle and Semillon grapes are harvested by hand at night and offer all their richness and aromas. After pressing and settling, a delicate and scrupulous work is done on this wine by stirring and topping up.A total maturation in demi-muids on fine lees (7 months), resuspension by stirring, and a malolactic fermentation will develop its fullness and complexity. Use of new barrels and barrels for up to 4 wines.
