Vinification and Maturing
The grapes, from low-yielding plots, are harvested by hand to preserve the quality of the clusters and create wines of great complexity. The v inification is traditional with a cold pre-fermentation maceration and an alcoholic fermentation controlled at a constant temperature to preserve the freshness of the aromas. This is followed by the malolactic fermentation. Gentle and carefully controlled pumping over operations are carried out daily to extract as much aroma and tannin as possible. These will be refined over the minimum 12 month ageing period.

Tasting Notes
A bright, intense ruby red hue. The nose reveals notes of fresh red berries, such as raspberries and blackcurrants, set off by hints of sweet spice. The palate is nicely concentrated and structured with silky soft tannins and a subtle cocoa-like finish.

Serving Suggestions
Recommended at 17°C. This subtle and fruity wine will be ideal served with spicy dishes, red meat and strong cheeses.
