Les Bénédictins Chardonnay 2018
Vinification and maturing
The grapes, from low-yielding plots, are harvested by hand to preserve the quality of the clusters and create wines of great complexity. After being harvested by hand, the clusters of grapes are pressed whole. The resultant juice undergoes a static cold settling before the alcoholic fermentation is carried out in French oak barrels. Ageing on the fine yeast lees lasts from 9 to 11 months, with stirring and topping up carried out once a week.
Tasting notes
Silky, pale-yellow hue with soft golden highlights. The fine nose reveals aromas of fresh white fruit, such as pear or wild peach, and citrus. These are complemented by floral notes of hawthorn along with subtle notes of white pepper. This is a soft, well-balanced wine that is fresh on entry to the palate and reveals a complex finish with an aromatic palette that is a blend of fruity and floral aromas.
Serving suggestions
Best served at 14°C. This wine is perfect as an aperitif and pairs nicely with fish, shellfish, or white meats such as a capon with chanterelle mushrooms and a foie gras sauce.
