Le petit Rhum ambré
After macerating the plants in alcohol reduced to 75°, it’s time for distillation.
Only the heart of the distillation is retained to ensure the purity of the distillate. Made from organic Cuban sugar cane molasses. The fermentation process is lengthy, taking about one month, and the distillation is done using a double distillation pot still. Post-distillation, the rum is aged in new 64-liter acacia wood barrels for 6 months. Acacia provides a drier character, whereas oak imparts tannins.
Tasting Notes:
Nose: Smoky notes, walnut, hazelnut, caramel.
Palate: Candied banana, velvety texture, powerful.
Finish: A well-defined dark rum with a smoky, caramelized character, along with spicy notes.
