Serve around 18°C with lamb or beef dishes, or with tasty vegetarian dishes ORIGIN The Minervois is located between the cities of Carcassonne and Bézier in the Languedoc region of southern France. PRODUCER Sarl Vignobles Plaza Tedaldi ABOUT THE PRODUCER Sarl Vignobles Plaza Tedaldi covers 150 hectares of vineyards and belongs to Domaines Auriol based in Lézignan-Corbières in Languedoc. The company is managed by the winemaker Claude Vialade. The company now owns four of its own wine chateaus, including Chateau Saint Auriol, but the main focus is on supplying and exporting wines from its own region. MANUFACTURING The different grape varieties are fermented separately. The Carignan grapes were fermented in whole bunches. HARVEST Clay and limestone. The grapes were harvested early in the morning in September and October.
