le Cerf Noir, IGP Perigord white 2022
This wine highlights "The Black Deer" of the Cave of Lascaux, discovered in 1940 and registered at UNESCO in 1979. This is the "Sistine Chapel of prehistory" and we are proud of this legacy of our Perigord region. The Deer, this noble animal, is part of the bestiary of the cave and was painted 18,000 years ago. The woods thrown backwards seem to indicate that the animal is bellowing far away in the forests of Périgord. Selected from our best Sauvignon blanc, the grapes are vinified in stainless steel tanks. Skinny maceration. Alcoholic fermentation between 17 and 18°C. Control of temperatures during fermentation. Ageing on lees during two to four months. Ageing in stainlesssteel tanks. With a clear yellow color with green hints, this Sauvignon blanc reveals aromas of blackcurrant buds and exotic fruits (litchis). Citrus fruits and white peach flavors in mouth. Acidulous and fresh final dominated by exotic fruits. Serving at 10-12°C. The vineyard is situated in the Périgord Pourpre region in the South-West of France, around the famous town of Bergerac, on clayey-calcareous soils.
