le Cerf Noir, IGP Perigord red 2022

This wine highlights "The Black Deer" of the Cave of Lascaux, discovered in 1940 and registered at UNESCO in 1979. This is the "Sistine Chapel of prehistory" and we are proud of this legacy of our Perigord region. The Deer, this noble animal, is part of the bestiary of the cave and was painted 18,000 years ago. The woods thrown backwards seem to indicate that the animal is bellowing far away in the forests of Périgord. 

Selected from our best Merlot, the grapes are vinified in stainless steel tanks. Maceration by cold before fermentation. Alcoholic fermentation at 25°C. Control of temperatures during fermentation. Traditional ageing with contact with wood during 3 months. 

With an intense red color, this Merlot reveals aromas of fleshy red fruits (plum). Agreeable final in the mouth and balanced and round tannins. Serving at 16-18°C.   

The vineyard is situated in the Périgord Pourpre region in the South-West of France, around the famous town of Bergerac, on clayey-calcareous soils. The IGP Périgord have been recognized Indication Géographique Protégée (IGP) in 1996
