Vinification: Low pressure pressing, inerting of the musts with nitrogen and rapid drop in temperature to extract the freshest fruit and aromas of the grape variety, gradual rise in temperature, fermentation and mixing of nitrogen lees and some oxygenation if necessary.
Wine profile: This pure Chenin, partially aged in oak barrels for 12 months and cultivated on the schist soils of Bonnezeaux, is for us the most transparent and clear expression of the king of the Loire. A taut, sharp and straightforward palate, a precise and powerful nose will allow the Cuvée de la Montagne to evolve well over the years.
