La chipie - Touraine Chenonceaux Blanc - white wine

The Touraine Chenonceaux appellation is a selection of the best Terroir of the Cher river Valley, appellation recognized in 2011. A wink at a mischievous and spirited young little girl, that’s how we define La Chipie : perfectly ripened Sauvignon grapes, almost 18 months of ageing to achieve a wine with suave and complex aromas of white flowers, citrus and ripe fruit. It will delight your guests with Scallops sautéed ! Skin maceration for 2/3 of the cuvée for 6 hours, gentle pneumatic pressing, and cooling maceration (bringing the juice to a temperature of 5°C/41°F) for 7 days. It is ageing 18 months on fine lies.
