L'EXCEPTION DU DOMAINE DE SAINT AMAND

Currently in conversion to organic viticulture.

Production : 4 000 bottles

Terroir : Gravelly, clay and limestone

Vine variety : 100 % merlot

Harvest : selection of plots, machine harvest at optimal maturity

Vinification : Pre-fermentation and alcoholic fermentation under organic protection ( no sulfur )  in temperature controlled vats. Malolactic fermentation in vats.

Ageing : 100% new French oak barrels for 15 months

Deep black-cherry robe, very intense, limpid and bright. Intense and profond nose of balck fruit on a background of cocoa beans. After agitation, very complex nose of blackcurrant, blackberry, raspberry and blueberry liqueurs.

Full bodied and opulent on the palate, fresh yet with a lot of substance. A soupçon of vanilla. Generous body of ripe fruit.
