Juliénas - Cuvée Thomas
Grape variety : 100 % gamay
Soil : Vines are located bettween 350 and 450 meters altitude with a medium to important slope. The soil is essentially composed with volcanic and silicious rock, shallow.
Vine : One vine is approximtively 50 years old. Pruning is gobelet system and it was planted with density of the traditional plantation: 10 000 growing stock per hectare. Mecanisation is not possible.
A new parcelle was planted in 2018, and according to agro-ecologic princip, many hedges grow aroud parcel, and trees will be planted into the vine.
I work my vine with Terra Vitis certification.
Vinification : The harvest is vatted through gravity to respect the integrity of the grape. The maceration of full grapes (carbonic maceration) lasts about 14 days. The temperature is regulated at 28 °C. Regular release, promotes tannins and colour extraction.
After malolactic fermentation, this wine matured in oak barrel during 10 months (barrel from 3 to 7 years old)

Tasting :
- Eye Deep red colour
- Powerful, full, greedy nose with aromas of quetsche, kirsch, ripe fruit and cinnamon
-The palate, frank and fresh, is well structured, with powerful tannins
Food and wine combination :
It goes well with marinated red meat, game dishes and pheasant meat
Consumption 12 to 14°C.
