The grapes are harvested at optimal ripeness, slightly
overripe, early in the morning to preserve their
«fruity» character and full potential of expression.
VINIFICATION AND AGING:
Each parcel is vinified separately.
A cold pre-fermentation maceration of 72 hours at
10°C is followed by an extended fermentation of 28
days at 26°C, with daily punch-downs.
Malolactic fermentation is conducted rapidly,
followed by early racking into Selmer barrels
produced in the Garonne Valley,
thus ensuring optimal balance.
TASTING:
The wine has a garnet robe with bright violet
highlights. The nose reveals woody aromas with
hints of hazelnut, toasty notes of cocoa, followed by
nuances of blackcurrant and other red berries.
In the mouth, the wine is full-bodied with a round
entry and substantial volume.
The mid-palate is powerful, dense, and structured,
characterized by overripe tannins, notes of blond
tobacco, and eucalyptus,
with exceptional persistence. This concentrated and
generous wine deserves decanting.
