L'HERBE FOLLE BLANC SEC

The hand harvest was carried out with the goal of preserving an interesting natural acidity in the fruit rather than waiting for complete phenolic ripeness. The final blend showcases a good varietal expression of each grape. On the nose, an explosion of delicate white flowers; on the palate, it is fresh, mineral, and peacefully supple, with good persistence.
