This cuvée is the result of a small selection of old vines.
Cuvée from manual harvest and parcels harvested at full maturity in the
middle and end of harvest.
VINIFICATION AND AGEING
Traditional vinification. Long cuvaison, about one month for a high quality
wine.12 months of aging on average in oak lightning.
TASTING NOTES
An intense garnet colour. The nose has a sweet aroma of blackberry and
black cherry. The palate is long, rich and powerful. A complex finish with
spices and firm and assertive tannins. A wine of very great preservation.
This beautiful cuvée can be enjoyed on a grilled beef rib, a roasted deer.
A carafage of wine on his youth is recommended, at least 2 to 3 hours
before serving.
FOOD AND WINE PAIRINGS
Enjoy this red Gigondas on a Provençal beef casserole, a hare stew, or
a wild boar roast.
