GRAPE VARIETIES
65% Black Grenache
20% Syrah
10% Mourvèdre and 5% Cinsault
TERROIR
On clay-limestone soils, we manually harvest grapes grown on vast terraces
and the first slopes of the Dentelles de Montmirail.
VINIFICATION AND AGEING
Vinification is traditional. Total eraflage on reception of the grapes. Cold
pre-fermentation maceration (18°C). Cuvaison 21 days long. Offloading,
manual pigging, daily reassembly. Setting bottle at optimal time and
rest of the wine before marketing.
TASTING NOTES
A bright dark red colour. A nose with aromas of blackberries, raspberries,
blackcurrant and liquorice. The palate has notes of ripe fruit, spices and
pepper. A well present aromatic freshness, a perfect balance in the mouth
with a beautiful structure without any aggressiveness.
FOOD AND WINE PAIRINGS
An elegant and very expressive wine to tune on veal marengo, an osso
bucco or a plate of charcuteries and cheeses.
Child care potential: 5 to 7 years
The service temperature must be between 16°C and 18°C.
