On clay-limestone soils, the grapes are harvested manually on the vast
terraces and the first slopes of the Dentelles de Montmirail
VINIFICATION AND AGEING
Traditional vinification. Total eraflage on reception of the grapes. Cold
pre-fermentation maceration (18°C). Long vatting (4 weeks on average).
Manual pigeages and daily remounts. Meticulous aging in vats before
bottling.
TASTING NOTES
The notes of garrigue, wild berries and black olives of this Gigondas
transport you to the heart of the Dentelles de Montmirail. The finish is
marked by hints of black pepper and zan.
FOOD AND WINE PAIRINGS
This Gigondas will be perfect with a leg of lamb with snail butter.
Optimum tasting: 7 to 8 years
The service temperature must be between 16°C and 18°C.
