Winemaking: The grapes are hand-picked, 100% de-stemmed and placed in vats. After a prefermentary cold maceration, the alcoholic fermentation begins. Punching of the cap is carried out twice a day during this fermentation. The wine is then raised in oak barrels for 18 months (with 20 to 30% new oak). It is racked up to three times during this period. It is bottled after fining and without being filtered, to ensure the aromas express themselves fully.
Tasting notes : This Gevrey Chambertin is very representative of its terroir. It has a beautiful violet colour. We find beautiful cherry, blackberry and blueberry tastes on the palate. The finish is spicy and accentuated by fine and elegant wood.
Serving Suggestions : Game and Venison (Wild Boar, Deer), Braised Meats, Mushroom Sauces, Mature Creamy Cheeses.
Ageing potential: Minimum 2 or 3 years until 8 to 12 years
