1 hectare on the 350-meter high Aumelas plateau (provides better temperature range for phenolic maturation).

Clay and chalky slopes made of stones with low fertility – different layers of stones and clay which allow water retention that is necessary in this dry climate.

Buds are pinched out and green harvesting is used in order to limit yield to 18 hectoliters/hectare.

Grapes : 90% Roussanne and 10% Grenache blanc

Manual harvest for better sorting in the vineyards and better handling of the grapes. 

Traditional vinification, including direct pressing, cold settling of the grape juice and temperature control. 

Aged for 15 months in Stockinger demi-muids (barrels), including occasional batonnage on fine lees
