Domaine Maldant-Pauvelot Savigny Les Beau 1er Cru "Aux Gravains" Red
The nose of this wine claims a certain ‘‘cold’’, with notes of wild blackberries, and revealing slightly smoked and roasted aromas. On the palate, this AOP combines freshness and strength, with a fleshy structure, soft and perfectly harmonious tannins. Tangy finish. An exceptional wine.

Wine ageing: Cold maceration during 12 days under protection of carbon dioxide to protect the precursors of aromas and colour oxidation. Fermentation in tank with temperature controlled. Vatting during 18 days, punching of the cap and pumping-over, soft and delicate pneumatic pressing. Ageing in 100% French oak barrels. 1/3 of new oak barrels and 2/3 of barrels from 1 or 2 wines. Tangential filtration before bottling.
Color: Deep dark red, almost bloody, we can see maturity of the black fruit. Nose: A bouquet of black fruits (cherry and wild blackberries) mixed with spices, cinnamon and black pepper. Slightly smoked and roasted. Mouth: Powerful and peppery, tannins are supple, ripe and harmonious with a tangy finish that brings fineness and lightness.
Food and wine pairing: Pan-fried foie gras or Regional cheese (Chaource, Mont d’Or). Cellaring Potential: 5 to 15 years.
