Domaine de la Pinsonniere Vouvray Demi-Sec

Our soil in Vouvray is clay limestone. The fermentation of our Chenin Blanc cepage is operated in old oak barrels (more that 5 YO) under temperature control. Malolactique fermentation at 70°C. After that the wines stay on lies during 4 months and we normally bottle at the end of March.
