Domaine de Cardon Bourgogne Les Gardes 2021

About 30 kilometers south of Beaune, in the Côte Chalonnaise, the vineyard extends over some 15 hectares in the Mercurey appellation. Rich in clay-limestone soil, the estate was born only in 2013 under the leadership of Frédérique de Cardon. However, the wine-growing history of the Cardon family draws its origins from the beginning of the 19th century, when it planted its first vines. But the vagaries of the 20th century ended up dividing the property and the vines were uprooted…. Thanks to Frédérique's determination and talent, the estate is reconnecting with its history. After investing in a vat room in Rully in 2015, the winemaker signed his first vintage the following year.
Terroir: The cuvée is produced from the plot called “Les Gardes” located on the edge of the town of Aluze. It faces due east, at an altitude of some 320 meters and its vines are between 20 and 60 years old. Rich in clay-limestone.
Vinification: The harvest is mechanical and meticulous, then the bunches are destemmed before being placed in vats, which will last three weeks. This allows better extraction of tannins, aromas and color.
Ageing: The wine is aged in oak barrels for 8 months.
Tasting: Dress with purple red reflections, the wine releases aromas of red fruits, tobacco and liqueur. On the palate, the tannins are very supple and fine and the juice very fruity. Light but salivating!
