Harvest: Manually, in small baskets and crates. Triple sorting: at the picking, in the rows and in the cellar. Vinification: Gravity movements. Low intensity pneumatic press. Temperature controlled. Maturing: 22 months in wood (demi-muids and tuns), concrete and 316 stainless steel. Bottling: estate bottled. ""fleur de liège"" cork.
