VALDORET PINOT NOIR

The Roussillon Province became French when Mazarin and Philip IV, King of Spain, signed the Treaty of the Pyrenees on November 7th 1659. At a more recent date, on March 28th 1977, two decrees defined the Appellations Contrôlées «Côtes du Roussillon» and «Côtes du Roussillon Villages». The «Côtes du Roussillon Villages» Appellation only applies to red wines. The estate, situated around the village of Estagel, has been handed down from father to son for many generations now, the Domaine Bousquet obtains its richness from the diversity of the soils of gneiss and granit arenas. This nutritious diversity in the vineyards, gives the Domaine Bousquet its complexity, the maturing conditions being excellent every year.

VARIETALS : Grenache noir-Carignan-Syrah
PRUNING : Carignan and Grenache in goblets, Syrah in guyots  

YIELD : 30 Hectolitres per hectare  

VINIFICATION : The old vines of the Carignan are vinified by carbonic maceration for 20 days. The Grenache noir and Syrah grapes are vinified by traditional maceration for 25 to 30 days. Fermentation temperatures : between 24 and 26 °C.  

MATURING : 6 months
AGEING POTENTIAL : 2 to 4 years  

TASTING : This wine is marked by a deep, brilliant robe, aromas of raspberries and blackcurrant which reveal a longlasting palate that reminds us of the sunny South. Through ageing, this racy and elegant wine will develop pleasant prune aromas.  

SUGGESTED DISHES : Accompanies perfectly pasta dishes, pizza, poultry and cheeses.
