Diaphane Grande Cuvée Blanquette
vinification and maturing
Grapes are exclusively hand-picked. The bottles are stored horizontally in dark cellars with regulated temperature 15°C and hygrometry so that the second fermentation also called « prise de mousse » takes place slowly in the bottle, an entirely natural process. Ageing period on second fermentation lees goes on during 12 months.
Tasting notes
The pale golden robe on green nuances of this young wine with silver brilliance which expresses freshness. The fine bubbles rise slowly in the middle of the glass. On the nose, the palette of varieties expresses itself around fruity aromas, with apple, pear, peach, grapefruit but also notes of garrigue scrub and nectar flowers such as hawthorn and elder. A delight in the mouth by its fresh and
round equilibrium. The bubbles delicately line the palate and make the fruity flavours explode in a sensual manner.
Serving suggestions
Recommended at 6-7°C. A wine suited to aperitifs and shellfish and raw fish appetizers.
