Crémant Prestige

Direct pressing, settling at 0°. Long alcoholic fermentation (3 weeks 1 month) at low temperature (15°) in thermoregulated stainless steel tanks. Breeding time: 5 years. The grapes are picked manually and carefully brought to the pneumatic presses. The first extracted juices, called «cuvées heads» are clarified and then fermented separately at low temperature.
