Climate in 2020 : A year under the heat and drought. Perfect sanitary status of the grapes and average yields, nice maturity and a good balance.

 

Winemaking : 

Pressing of the whole grapes by selecting the best juices. Traditional vinification as a still wine. Maturing on lees until spring and bottling.

Taking of foam. Maturing on lees in the bottle for a minimum of 12 months. Stirring and disgorging.

 

Tasting :

Nose : Notes of white fruits with a zesty touch.

Mouth : Pearly attack, supple structure on the lemony flavors and a persistent finish.

Temperature of service : Drink between 6° to 8°C
