TERROIR
The Côtes du Rhône Villages Sainte-Cécile appellation was recognized in
2016. On the banks of the Aygues river, the cultivation of vines stretches
as far as the eye can see... The vineyard is located in the communes of
Sainte-Cécile-les-Vignes, Tulette and Rochegude.
The vines are cultivated on clay-loamy and stony soils.
VINIFICATION AND AGEING
Traditional vinification. Total eraflage on reception of the grapes.
Cuvaison average of about 15 days.
Deletions for a fine extraction of the color, remounts
daily. Manual pigeages.
TASTING NOTES
A purple dress, on the nose this Saint Cecilia red reveals black fruits
such as black cherry and blackcurrant. In the palate, we find material
and structure, black fruits with firm tannins that suggest a beautiful
guard. A liquorice finish that makes it a wine of caratère.
FOOD AND WINE PAIRINGS
A perfect match on a lamb navarin, a pork cheek, a cheese platter.
Custody potential: to drink within 5 years
The temperature of the service must be between 16°C and 18°C.
