Tasting :
The nose is very complex, with lovely aromas of the secondary evolution of Chardonnay: hazelnut, toasted, toasted, almond, custard...and a hint of sweet roasting (green coffee). Then notes of citrus: candied tajine lemon, and fruit: juicy yellow peach.This complexity is repeated on the palate, with a sparkling vivacity, pretty citrus notes such as bergamot, underlined by a lovely freshness (marked acidity), a very fine, delicate length and an elegant, saline, mineral finish, where the limestone of the Sézannais region comes to the fore.
Food Pairing :
The Cléo is the perfect accompaniment to cooked fish such as wild turbo roasted in semi-salted butter, pan-fried scallops just seared with a shallot reduction, sautéed razor clams with preserved lemon and buttered croutons.
