TERROIR & ESTATE Pebble terraces. Average age of the vines: 45 years old (some over 100 years). Surface: 30 ha. Yield: 34 hl/ha. GRAPE VARIETIES Grenache 75% Mourvèdre 15% Syrah 10% WINEMAKING Manual harvest, followed by destemming and crushing. Traditional fermentation in temperature-regulated tanks (stainless steel) with a long maceration (minimum 3 weeks) for optimal extraction of colour and flavours. Malolactic fermentation, blending and aging in cellar for 36 months before bottling. TASTING NOTES Deep garnet colour. Complex nose with hints of liquorice, brandied cherries and brambles. Notes of venison after twirling. Medium bodied with elegant tannins. Perfect to drink now, but could be aged for up to three more years. Pair with peppered steak, game, lamb or beef stews, honey-roasted figs in red wine sauce, and tasty matured cheeses.
